  • 2 bade pyaz, julienne mein kate hue

  • 2 medium tamatar, puree banakar

  • 4 tbsp tel ya ghee (frying ke liye)
  • 1 tsp jeera powder
  • 1 tsp dhania powder
  • 1 tsp garam masala

Steps

  1. Kathal ko fry karein:  Pehle medium heat pe oil ya ghee garam karein. Kathal ke tukdon ko fry karein jab tak woh golden brown aur thoda crispy na ho jaayein. Isse kathal mein ek smoky aur deep flavor aayega. Fry karne ke baad ise nikaal kar side mein rakh dein.

     

  2. Masala ke liye pyaz bhunein: Wahi oil mein julienne kiye hue pyaz daal kar golden brown hone tak bhunein. Pyaz ko dheere dheere bhunna important hai takii woh caramelize ho jaaye aur masala ka base perfect bane.

     

  3. Adrak-lehsun paste add karein: Pyaz mein adrak-lehsun ka paste daal kar tab tak bhunein jab tak iska raw smell khatam ho jaaye aur color thoda brown hojaye.

     

  4. Tamatar aur masale daalein: Ab tamatar ki puree daal kar acche se mix karein. Phir jeera powder, dhania powder, lal mirch, haldi aur garam masala daal kar 5 minute tak masala pakayein takii sab masale achi tarah se mil jaayein.

     

  5. Dahi milayein: Flame dheere kar dein aur dheere dheere whisked dahi daal kar regular stir karein. Dahi ko slow aur dhyan se daalna hota hai, nahi toh phat sakta hai. Masala ko tab tak pakayein jab tak tel alag na ho jaaye.

     

  6. Fried kathal daalein: Ab fried kathal ke tukdon ko masale mein daal kar acche se mix karein. Dhimi aanch pe 5 minute tak pakayein taaki kathal gravy ko achi tarah absorb kar le.

     

  7. Dhaniya se garnish: Upar se hara dhania chhidke aur garma garam naan, roti ya chawal ke saath serve karein.
